Apple Pie Protein Muffins
– 1 c. Flour
– ¾ c. Oat Flour
– ½ c. Vanilla Whey Protein (I used JaktRX Vern’s Vanilla)
– 1 tsp Baking Powder
– ½ tsp Baking Soda
– ½ tsp salt
– 1.5 Tbsp Cinnamon
– 6 Medjool Dates, pitted and chopped
– 2 Granny Smith Apples, peeled and grated
– ½ c. Maple Syrup
– ¼ c. Vegetable Oil
– ¾ c. Milk
– ½ c. Apple Juice
– 1 Large Egg, whisked
– 2 tsp Vanilla
1. Preheat oven to 400 degrees F.
2. Combine all dry ingredients in a large mixing bowl.
3. Combine all wet ingredients in a small or medium mixing bowl.
4. Slowly combine wet ingredients into the dry ingredients, mixing well.
5. Fill into lined muffin tins, bake for 20 minutes.
