Maple Pecan Muffs
– 1.5 c. All-Purpose Flour
– 1/4 c. Sugar
– 2 tsp. Baking Powder
– 1/2 tsp. Salt
– 4 Dates, chopped
– 1/2 c. Pecans, chopped
– 1/2-1 tsp Cinnamon
– 1/4 c. Milk
– 3/4 c. Vanilla Greek Yogurt
– 1/4 c. Vegetable Oil
– 2 Eggs
– 1 tsp Vanilla
Optional “Icing”
– 3 Tbsp Greek Yogurt
– 1 Tbsp Maple Syrup
1. Preheat oven to 350 degrees F.
2. In a large mixing bowl, combine all of the dry ingredients.
3. In a small bowl, combine all of the wet ingredients.
4. Slowly combine the dry and wet ingredients.
5. Transfer to muffin tins and bake for 15-20 minutes until golden brown.
6. Optional to cool and the drizzle over some of the “icing.”
