Mojo Mojito Chicken
– 4 Skinless Chicken Breasts
– Zest of 1 Lime
– Juice of 1 Lime
– 2 Tbsp Olive Oil
– 1 Tbsp Garlic, minced
– Fresh Mint Leaves (a bunch)
– Salt & Pepper
1. In a large Zip locked bag add the chicken, lime zest, lime juice, olive oil, garlic, 2 handfuls of mint leaves, and salt/pepper. You will want to add more mint leaves than you are thinking because you will likely lose some in the marinating and grilling process, so don’t worry if it seems like a lot. I was pretty generous with the salt and pepper on this one as well for some extra flavour. Marinate for 1-24 hours.
2. Grill over medium heat until internal temp reaches 165 degrees F.
